Difference between white and black pepper

Black pepper is a puzzling spice despite its popularity. Before processing, it's barely even black.

White pepper complicates everything. Both components are berries from the same plant, but appear, taste, and are utilised differently.

The Pioneer Woman says white and black pepper come from Indian Piper nigrum. 

Green, underripe berries are harvested for black peppercorns.

Cooked and dried berries have a dark, shrivelled outer covering.White peppercorns are ripe Piper nigrum berries.
